My mom's "formal" birthday cake - Guinness Fudge Cake! Two 9" springform pans choke-full of the best combination known to man: beer, chocolate, butter and sour cream! These cakes are moist, rich and sturdy, which makes them good for stacking if you're so tilting - which I obviously was. It took 4 floods of ganache to cover this baby after I filled it with cream cheese frosting (I love the colour/flavour contrast!), then I chilled it down before doing the conclusive decorations.
