About the days when you knew spring was coming by the arrival of asparagus at the grocer. These days, fresh asparagus is available almost all year. But still, my heart leaps with joy the beginning moment I see asparagus for less than $3 a pound. Then it is officially spring. When asparagus is in season, I buy it weekly, both because it’s so cheap and because it’s incredibly versatile. I serve it raw with a tangy Greek yogurt or blended bean dip for a tidbit, or chopped up and tossed with lemon juice, freshly ground black pepper, a dash of rich extra-virgin olive oil and a few shards of Parmesan cheese. To do this, just propel the stalks in a bit of olive oil, salt and pepper, then pop in a 400 F oven for 10 minutes. Or roast asparagus for half that time, which will keep some of that bright, grassy flavor, then whiz them up in a blender with unusual herbs, chicken stock and some lime for a bright springtime soup. For a tender, fresh take on asparagus, you also can blanch it in a pot of well-salted boiling wet. Blanched asparagus will keep in the refrigerator and can be used to top salads, as snacks, or be added at the last second to a saute. The best news is that you can eat asparagus with surrender. A full cup of fresh asparagus has fewer than 30 calories, yet still gives you 3 grams each of protein and fiber. This brown butter asparagus will be a regular on my pr this spring. My daughters visited a cranberry bog this over week as a class field trip (cranberries are big agricultural business in my corner of Massachusetts.) They came back with a few bags of berries that they had picked themselves, and wanted to cook something with them. I wanted to try something other than the ordinary cranberry bread, cranberry sauce, or muffins, and I'd just recently stumbled across a recipe online for “Apple Breton Cake.” That had sounded tasty, and apples doublet well with cranberries, so I did a little research. The results were, er, inconclusive. All the sources I found online agreed on a few things. Breton Cake, or “Gateau Breton,” is a butter-based cake originating in Brittany, and the recipes uniformly called for a spring-form pan. After that, the recipes short down into several styles, some with pound-cake-ish batters, others with doughs more like pie crust, and some emphasizing caramelization to build flavor. So, while I'm calling this a Breton Cake, I can't say...

This is one of my family's favorite recipes (from the Eating Fountain-head cookbook). The potato put us off at first, but really just locks in the moisture. For the above, I've doubled the recipe and made it as a layer cake, the layer filling consisting of ginger preserves and some pomegranate seeds, and then the complete thing covered in chocolate frosting and more pomegranate (usually I make the layer and outside chocolate and the top I cover with raspberries, but it's not raspberry season...). Also, the means usually calls for half a tsp of cinnamon and a quarter tsp of nutmeg, but I prefer cardamom.
