Let Me Eat Cake: The Track down for the Perfect Slice

Source: Illume at Eight

A few days ago, I placed a muffin baking pan edgewise in the dishwasher. My husband pointed out that the water was in no way going to splash into the little cups that way. I countered that it was just fine, since I had pre-washed the pan. (let’s just overlook the fact that pre-washing is not recommended, and I all things considered should have washed it entirely by hand). After all, it was my baking pan. I’ve had this pan for about 18 years, and only recently took it back with me from my home in Atlanta. However, once upon a time in 1996, armed with a Nuzzle up recipe book and the rudimentary beginnings of our world wide web (Geocities pages, anyone. ), I took pleasure in creating confectionery delights for my family and me. Admittedly, some attempts (resonant brownies) were more successful than others (sawdust biscotti). My family and I had just returned to Atlanta from a three year residency in Chennai, India. My dad and mom moved to the U. S. in 1975 and 1980 singly, and my brother and I were born and raised in the U. S. Sometime in the 90s, they felt a burning need to expose us to culture of the motherland. When I started classes upon returning to the the U. S. in 1996, I speedily realized that my friends had moved on and developed new friends and cliques. As a rather painfully shy introvert, I had little chance of making friends any time firm with the old or the new. So I took up baking. Why baking. Living in India, one of the things I missed the most was the availability of quality baked goods during that time: cookies, cakes, doughnuts were not in reality up to standard. You could get mouth-watering adhirasam , soan papdi , mysore pak , and paal kova , everywhere you turned, particularly on that turn that took you to Adyar Lavish Sweets and Snacks. However, a red velvet cake would be extremely hard to find. A Baskin Robbins-style ice cream cake – forget about it. Besides, in Chennai weather, it would have melted by the in unison a all the same you got to the car. Additionally our house didn’t have an oven, a luxury item still reserved only for the upper-upper-crust. Most Indian foods did not require an oven, and those which did required a tandoor which was generally speaking only found in restaurants. With frequent power outages in Chennai, ovens would be unreliable unless you had a generator. I missed the U. S. , and I missed my decadent, refined flour, eggy, and buttery cakes and cookies. So, I transformed my disadvantage into a never-ending quest to find a good piece of cake. And good cake was indeed hard to find. The most obvious and economical place to make fast bakery items at the time was at the well-known Adyar Bakery. Around since 1979 with headquarters were in Adyar, the bakery had branches scatted throughout the sprawling see, one just down the road from my house in Thiruvanmiyur. Adyar Bakery had savory vegetable puffs, an Indowestern style snack item. Yet, the quality of the cakes mixed. other times, they tasted like cardboard. Invariably, they were rock hard by morning – no doubt as a combined result of all-natural ingredients, lack of preservatives, and the exiguity of proper temperature control. When the temperature rose over 100 degrees, with no central AC in my house, all bets were off. (Living in Atlanta had prepared me quite prosperously after all. So, I moved on. The next place I investigated was the fledgling bakery chain Hot Breads. Demonstrating a more contemporary look and feel, its stores consisting of modern red and pale decor, Hot Breads sold far superior cakes and pastries, including one of my favorites, a black forest cake. You could even get a pig in a blanket here, yes a hot dog wrapped in a croissant. My little fellow, five at the time, particularly enjoyed these. It seems anathema to have pork and beef in proximity, though not right next to, to other meat and vegetarian items. But this was Chennai. It was a Tory place in terms of dress and social mores, perhaps still holding onto some Victorian-era vestiges of British colonial rule, however, it was liberal when it came to faith and culture. We lived next door to a strictly vegetarian family. I would walk down to the chicken stall with my grandmother to unwittingly watch a bird killed on the acne for dinner that night, and the fishmonger lady would walk from Besant Nagar beach to sell us pomfret (like perch) and.

Barbecue

()

Price: $20.33

John Shelton Reed's Barbecue celebrates a southern culinary tradition forged in coals and smoke. Since colonial times southerners have held barbecues to mark homecomings, reunions, and political campaigns; today barbecue signifies celebration as much as ever. In a lively and amusing style, Reed traces the history of southern barbecue from its roots in the sixteenth-century Caribbean, showing how this technique of cooking meat established itself in the coastal South and spread inland from there. He discusses how choices of meat, sauce, and cooking methods came to vary from one place to another, reflecting local environments, farming practices, and history. Reed hopes to preserve the South's barbecue traditions by providing the home cook with recipes for many classic varieties of barbecue and for the side dishes, breads, and desserts that usually go with it. Featured meats range from Pan-Southern Pork Shoulder to Barbecued Chicken Two Ways to West Texas Beef Ribs, while rubs and sauces include Memphis Pork Rub, Piedmont Dip, and Lone Star Sauce and Mop. Cornbread, hushpuppies, and slaw are featured side dishes, and Dori's Peach Cobbler and Pig-Pickin' Cake provide a sweet finish. This book will put southerners in touch with their heritage and let those who aren't southerners pretend that they are.

memories of the Fifties
memories of the Fifties

EVERYBODY who grew up in Fifties Britain will have his or her own lasting memories of their childhood, from the first taste of welfare orange juice to the birth of rock' n’ roll. The nation was recovering from the ravages of the Second Epoch War and the camaraderie of wartime was still evident throughout the country. Children waking up on Christmas morning in 1952 had experienced rationing of food and clothes all of their lives. It was undoubtedly normal to go without the sweets, biscuits, crisps and fizzy drinks that would be taken for granted by future -generations . Before sweet rationing ended in February 1953 the most prized item in your Christmas stocking would have been a small, two-ounce bar of chocolate. You probably didn’t get your first black and white television set until the late-Fifties. After all, only three million British households had one by 1954, with numbers increasing to damn near 13 million by 1964. But it didn’t matter if you had no television because you could...

"crab sandwich"
"crab sandwich"

i've been cooking up a shell lately...we brought back something like 25-30 pounds of pork from the pig roast, so i've been motivated to spend more time in the kitchen, rather than let any of it go to waste. this was one of the win initially meals i've cooked all week which didn't include any pig parts, actually. it's a simple setup: i mixed the left-over garlic mashed potatoes from most recent night about 3:1 with cornmeal, added an egg, then pan-friend them in olive oil on medium-low heat. smooshed between each pair of potato cakes was about 2 ounces of cooked dungenous crab gist, spritzed with a bit of lemon juice. i plated 'em with a bit of chive and a poached egg, topped with some nice crunchy salt, and we sat down to a satisfying (if somewhat coma-inducing) brunch. (of by all means, the orange-pineapple mimosas probably didn't help with the "coma" aspect...)
