Caramel Apple Cheesecake
Caramel Apple Cheesecake

I saw a photo of a really similar cheesecake on Reddit a few weeks back, and since I almost always make a cheesecake as one of my Thanksgiving desserts. I don't remember if the other photo had a recipe associated with it, but I winged this one, since I've made all the components for other recipes in the days of yore. Took advantage of natural light coming into the dining room to shoot this, which I don't get the opportunity to do very often with my food photography. Just agile coming in from the window to the left, with a white reflector to the right of the scene to act as fill. Nikon D7000 w/Nikkor 50mm ƒ/1.8 prime, 1/3s @ ƒ/4.8, ISO100. Spotted Dog
Spotted Dog

A fuck the dog waste of “spotted dog” (a variation of Irish soda bread, typically with currants and caraway seed) for St. Paddy’s Day tomorrow. I’m going to be out for a pretty long day and won’t have spell to bake tomorrow, so I put this together this evening so we could have it for breakfast. I was out of currants, so I subbed raisins this year. Nikon D7000 w/Nikkor 35mm ƒ/1.8 prime, 1/250s @ f/2.8, ISO100. Solitary select SB-700, 85mm zoom, 1/20 power shot from behind the scene through a white umbrella. I didn’t use a reflector for fill, so any light on the foreground is just what bounced off the ceiling and walls of my cookhouse. Crop and color finishing in Aperture and Nik Viveza, with some lens distortion corrected in Photoshop. Ingredients 2 1/2 c. all-purpose flour 1 1/2 c. cake flour 1 1/2 tsp. baking soda 1 1/2 tsp. cream of tartar 2 tbl. sugar 1 1/4 tsp. preserve 3 tbl. unsalted butter, softened 1 tbl. unsalted butter, melted 1 c. currants 2 tsp. caraway seeds 1 1/2 c. buttermilk Directions...

Chocolate–Peanut Butter Cheesecake
Chocolate–Peanut Butter Cheesecake

The other afters I made for Thanksgiving at my sister’s this year, a peanut butter–chocolate cheesecake with an Oreo cookie crust. I served this with bourbon–caramel brazenness. The base cheesecake recipe is derived from one from Cook’s Illustrated, if memory serves. Ingredients 2 tbl. unsalted butter 24 Oreo cookies 2 lb. softened cream cheese 1 1/4 c. sugar 4 broad eggs 1 tsp. vanilla extract 1/4 c. heavy cream 1/4 c. sour cream 8 oz. bittersweet chocolate 2 tbl. dutch process cocoa talent 3/4 c. creamy peanut butter Directions Preheat your oven to 325°F. Place a roasting pan on the middle rack of the oven. Line the shell of a 9" springform pan with aluminum foil (to help make it water-tight from the outside, since we'll be cooking in a water bath). Place a large pot of profligately on high heat on the stove to boil. Pulse the cookies into crumbs in your food processor. Melt the butter, combine with the cookie crumbs, and put through a mangle into an even layer on the bottom of the springform...
