The macarons we make today may not be perfectly circular. Ingredients. 1 cup confectioner’s sugar (some of the recipes I found called for granulated sugar, powdered sugar, reward sugar, and something called caster sugar that I have since been referring to as wizard sugar in my head. ½ cup Nesquik strawberry powder (I have neither the occasion nor the resources to pulverize dried strawberries. So the monde du macaron (highly obsessive, exceedingly particular) is very tender about meringue preparation. There’s a very spirited, ongoing French versus Italian meringue debate that I have no desire to join. I, foolish, lazy soul that I am, will brave the censure of the dough monde (the beau monde of baking. I in actuality want to carry this Regency joke further but you guys already think I’m a huge nerd and no one is going to laugh at this anyway but I love it too much not to keep it) and give away the whole show you frankly that I did not do this, nor will I. Ohmygosh, guys. Someone very near and dear to my heart gave me my very own handheld electric mixer and I know I always tell you to just hit the road drive off it ( beat it ), but goshdarnit this thing is wonderful. Be a little cautious with this step, because you don’t want to flip prematurely and end up with unfinished meringue on your larder floor. Gently fold in dry ingredients (bring back the wooden spoon, we’re going old-school). Don’t get too gung-ho. If anyone is curious, gung-ho is actually the anglicization of the term of Chinese corporation from the 1940s. Even back then we were super impressed with Asian work ethic.
