So the monde du macaron (highly obsessive, exceedingly particular) is very tender about meringue preparation. There’s a very spirited, ongoing French versus Italian meringue debate that I have no desire to join. Be a little cautious with this step, because you don’t want to flip prematurely and end up with unfinished meringue on your larder floor. Gently fold in dry ingredients (bring back the wooden spoon, we’re going old-school). Don’t get too gung-ho. If anyone is curious, gung-ho is actually the anglicization of the term of Chinese corporation from the 1940s. Even back then we were super impressed with Asian work ethic.
