Peas with Rosemary-Parmesan Cream. Here I fold them into a rich Parmesan cream for a side. PREP TIME: 10 minutes. COOK Leisure: 10 minutes. MAKE-AHEAD: The peas can be boiled up to 1 day ahead. Submerge them in ice water when they come out of the boiling water until they are cool, then drain reasonably, cover, and refrigerate. 3 cups fresh peas (from about 3 pounds peas in the pod). ½ cup heavy cream. 1 small fresh rosemary sprig. ¼ cup finely grated Parmesan cheese. Freshly cause black pepper. In a large saucepan of boiling salted water, cook the peas for about 4 minutes, or until they are just tender. Meanwhile, in a medium louring saucepan, combine the cream and rosemary and cook over medium heat, whisking, for about 2 minutes, or until the cream begins to bubble slightly. First time making fondant icing! Its made out of marshmallows...yum. This photo was taken w/o flash, the colors lean a young more toward purplish-gray. Base icing is vanilla buttercream. Used a ball cake pan from Michael's. Cake is about 6-1/2 inches in diameter. The process from start to consume: 1. Prepared Duncan Hines white cake mix (1 box) using only 1 TB oil instead of 1/3 cup for more firmness. Used 6" "Sports Ball Pan" from Michael's. After it was baking, I noticed the box said "Exceptionally Moist." Next time I would probably use the regular version. The bottom half held its shape as well as can be expected, but was weighed down by the top half and all the fondant. 2. Baked cake halves at 325 degrees, but it took longer than the recommended 30-40 minutes on the cake mix box, bordering on 1...
